Broccoli rabe with raisins and hot pepper

Bitter broccoli rabe paired with sweet raisins and spicy red pepper in a quick, easy recipe

Ingredients:

1 pound of broccoli rabe
Extra virgin olive oil
Hot, crushed red pepper to taste
3 garlic cloves, halved and crushed
1/4 cup golden raisins
1/4 t salt
1/4 t freshly ground black pepper

Preparation:

1. Chop up the broccoli rabe and bring an abundant pot of water to boil for 2 minutes; or, to better conserve nutrients, steam for 2-3 minutes.

2. Heat a large saucepan over medium heat and add about a tablespoon of olive oil. Add the red pepper and garlic, pressing to release juices. Stir and cook for just about 30 seconds, then add the broccoli rabe and sprinkle with raisins. Stir and cook for about 2 minutes, adding salt and pepper to taste.
