Luncheon on the back Porch

Some traditional food for guests visiting from out of town. Easy to make and very popular.


Crab Salad Stuffed Tomatoes


1 lb pound crab

1-2 stalks celery

4 tsp minced chives

1 tsp minced fresh tarragon leaves

1/3 cup mayonnaise

3 Tbsp sour cream

1 tsp fresh squeezed lemon juice

1/2 tsp Dijon mustard

2 Tbsp chopped olives or olive tapenade spread

salt and fresh ground pepper to taste


Toss crab, celery, chives, olives and tarragon together.  Whisk mayonnaise, sour cream, lemon juice, mustard, and salt and pepper together. Pour dressing over crab mixture and toss. Slice enough off the top of each tomato and remove the core.  Scoop out tomato pulp. Fill the hollowed tomatoes with crab mixture.  Serve on a bed of lettuce. tomatoes on vine crab tomatoes crab stuffed tomatoes
