2 chicken breasts
1 head of broccoli
1 T cajun powder
1 clove garlic, halved
Dash of hot chili pepper, to taste
Dash of paprika
Salt, to taste
2 T EVOO or more
1. Steam broccoli until tender-crisp. Remove from heat.
2. Combine cajun powder, hot chili pepper if using, paprika, and salt and spread on a plate. Dredge chicken breasts in the mixture. Heat oil in a medium-sized skillet over medium heat, and add garlic, pressing juices out with a fork until it sizzles. Add the chicken and cook until just opaque in the center, about 5-7 minutes, turning once or as needed.
3. Serve on two plates, and add squirts of lemon. Immediately add broccoli, salt, and lemon to skillet and cook, stirring constantly, until veggies are coated. Turn heat higher to sear broccoli, about 2 minutes. If any drippings are leftover, drizzle over the chicken and broccoli.
